Margarita cupcakes recipe

Last night I was treated to a Mexican supper at my friend Omesh’s place. Eating anything he whips up is always a treat ‘cos he’s tres talented in the kitchen (all those years on an East-NET cooking show totally paid off) and, like me, takes a ‘theme’ rather seriously. Thus, I decided to include a bit o’ Mexican flare to my dessert by baking tequila and lime-infused Margarita cupcakes from a recipe I adapted from the ‘net.

Fiesta! Lambada! Effort to make? Nada!

Wanna make them yourselves? Here’s how:

First buy a Snowflake cupcake kit. (You didn’t think I had time to make the batter myself, did you?). I opted for the Barney kit ‘cos the batter/cake-y part is muddled with green food colouring and comes with a mix of green and yellow sprinkles – the perfect hues for a Margarita).
Make your cupcake batter as per the intructions on the box (it takes two mins and requires an egg, a bit of oil and milk).
To add a zingy lemon-flavour, add a few drops of lemon essence.
Spoon the batter into the green cupcake paper cups included in the kit and bake them for 12 to 15 mins.
Make the icing while they bake. I ignored the horrid purple icing mix that comes with the Barney cupcakes and made my own by mixing a quarter brick of butter with loads of icing sugar until I got a nice, thick buttercream texture. Add a Tbsp of tequila, a bit of lime juice and a good few grinds of salt to the mix.
Once your cupcakes have baked and cooled, ice them generously and decorate with the sprinkles from the kit.

Et voila, you’ve got Margarita cupcakes!

Omesh and co really, really liked them and even my boyfriend, who’s harder to impress than Simon Cowell, gave them two thumbs up.
